During the colder months, I find myself craving comfort food. This creamy salmon recipe shows you an easy way to add richness to your cooking by adding one ingredient. During warmer months, you could easily substitute the cream with a lighter cooking liquid, such as fish stock, vegetable broth, or white wine.

Salmon Baked in Herbs & Cream 

Serves 4

1 tbsp(15 ml) olive oil or melted butter
¾ cup (177 ml) heavy cream
4 - 6 bay leaves and/or thyme sprigs
½ lemon, for zest and juice Kosher salt and freshly ground black pepper
4 6-ounce (170 grams) salmon fillets

Instructions:

  1. Preheat the oven to 400° F (204° C). Prepare a baking dish just large enough to snugly fit salmon fillets in a single layer; lightly oil baking dish and set aside.
  2. In a mixing bowl, combine cream, herbs, and a strip of citrus zest and squeeze of juice; add to baking dish. Season fish and add to baking dish, gently flipping each fillet to coat evenly.
  3. Transfer fish to oven and cook until flaking apart easily and opaque throughout, about 10 - 15 minutes (thinner pieces cook more quickly, thicker need more time).

Nothing says comfort to me up on a cold day like an ooey, gooey grilled cheese. I use a flavorful cheddar and mozzarella for the balance of flavor and cheese stretchiness. Pair this with a cup of soup, tomato being my favorite, and it warms me up better than a blanket can!

Classic Grilled Cheese
Serves 1

2 slices sourdough bread
2 tbsp (30g) salted butter
1/3 cup (79 ml) sharp cheddar cheese (Beecher’s Cheddar is my favorite)
1/3 cup (79 ml) mozzarella, freshly shredded


Instructions:

  1. Slather both sides of each piece of bread with the butter (yes, all 4 sides!).
  2. Heat a heavy-based skillet or frying pan over medium-low heat. Place both pieces of bread in the skillet and lightly toast for 1 minute to warm it through and create a light crust
  3. Flip one slice of bread, then pile on the cheddar cheese followed by the mozzarella. Place the other slice of bread on top, with the hot toasted side in contact with the cheese.
  4. Cook for 3 minutes or until the bread is evenly golden and crisp, pressing down lightly with a spatula periodically. If it's browning too quickly, remove from the stove to cool down and lower heat.
  5. Turn the sandwich over and cook the other side for 3 minutes or until the bread is golden and the cheese is melted.
  6. Transfer to cutting board. Cut in half in one swift motion. Cut into triangles if you want to feel like an adult, or rectangles if you want to connect with your inner child!
